Specialty & Third Wave Coffee


Specialty Coffee - Not to be confused with "gourmet" or "premium" coffee, which are only marketing terms with no defined standards. Coffee can only be called "Specialty" if it scores 80 points or above on a 100 point grading scale (monitored by the Specialty Coffee Association of America). Specialty Coffees are distinctive because of their rich, full-bodied taste, -- from beans with little to no defects.

Third Wave Coffee - This term refers to an even more refined category of Specialty Coffee. Third Wave Coffee aspires to the highest form of artisanal culinary appreciation. It encompasses a relentless pursuit of connoisseurship, quality and craftsmanship, including improvements to all phases of the bean, from how the plant is grown and tended, harvested, processed, dried, roasted, traded, and brewed.


The Third Wave Coffee movement places importance on fair trade and sustainable practices,  sourcing from smaller farms, with single-origin coffee (instead of blends). Third Wave Coffee is also often a lighter roast, which retains more of the particularity of flavors — as influenced by factors such as soil, altitude, climate, processing methods, etc.
